Beef Stroganoff

  • 1 1/2 pounds beef fillet
  • salt and pepper to taste
  • 3 T butter
  • 1 T flour
  • 1 cup canned beef consomme
  • 1 t prepared mustard
  • 1 onion sliced
  • 3 T sour cream, at room temp

Directions

    cut beef into narrow strips. season with salt and pepper and refrigerate 2 hours.

    In a saucepan melt 1 1/2 T butter, add flour and stir until blended. Meanwhile, bring consomme to a boil and add all at once to butter/flour mixture stirring with whisk until sauce is thickened and smooth. stir in mustard.

    In separate pan heat remaining butter, add meat and sliced onion and brown quickly on both sides. Remove meat and discard onion.

    Add sour cream to mustard sauce and heat over a brisk flame for 3 minutes. Pour sauce over meat and serve.
