  • 1 lb lean beef, cut into bite-sized pieces
  • 1 teaspoon butter
  • 2 cups fresh sliced mushrooms
  • 12 cup chopped onion
  • 1 cup nonfat beef broth
  • 2 tablespoons ketchup
  • 1 garlic clove, minced
  • 2 tablespoons cornstarch
  • 1 cup fat free sour cream

    Saute the mushrooms, onions and garlic in butter.

    My son won't eat onions, so I process them and the garlic in the food processer first.

    He can't tell the difference.

    Add the beef and ketchup.

    Make a slurry with the beef broth and cornstarch, then add to beef mixture.

    Cook until thickened, then add the sour cream.

    Serve over noodles, potatoes or rice.
