Beef Tacos

Ingredients

  • 2 lb. ground beef
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 1/2 tsp. chili powder
  • 2 (4 oz.) cans chopped green chilies, drained
  • 1 (7 oz.) jar roasted sweet red peppers, drained and chopped
  • 1/4 c. chili sauce
  • 2 tsp. sugar
  • 1 1/2 tsp. salt
  • 1/4 lb. sharp Cheddar cheese, shredded (1 c.)
  • 2 medium tomatoes, chopped
  • 1/2 medium head iceberg lettuce, thinly sliced
  • taco shells
  • bottled hot or mild taco sauce (optional)

Directions

    In skillet over high heat, cook ground beef, onion and garlic until all pan juices evaporated and meat is well browned, stirring frequently.

    Stir in chili powder; cook 1 minute.

    Stir green chilies, roasted red peppers, chili sauce, sugar and salt into mixture; over medium heat, heat through.

    To serve, spoon meat mixture into warm bowl.

    Arrange shredded cheese, chopped tomatoes and sliced lettuce in separate bowls for taco accompaniments.

    Let each person spoon some beef mixture into a taco shell, then top with taco accompaniments and taco sauce.
