Ingredients

  • 2 quarts water
  • 1 lb meaty beef shanks
  • 2 (15 ounce) cans kidney beans, drained and rinsed
  • 1 (14 ounce) can tomatoes
  • 1 cup sliced carrot
  • 1 cup onion
  • 1 cup diced turnip
  • 1 cup cut green beans
  • 1 celery rib
  • 1 half onion
  • 1 teaspoon dried oregano
  • 1 teaspoon thyme
  • 1 bay leaf
  • salt and pepper

Directions

    Combine all ingredients, except salt and pepper in slow cooker; cover and cook on low for 6-8 hours.

    Remove beef shanks; cut meat from bones and return to soup.

    Discard bones and bay leaf; season to taste with salt and pepper.
