Beefy Cornbread Casserole

  • 1 pound Ground Beef
  • 1 whole Onion, Chopped
  • 3 whole Jalapeno Peppers, Chopped
  • 1 package (8.5 Oz. Package) Cornbread Mix
  • 3/4 teaspoons Salt
  • 1/2 teaspoons Baking Soda
  • 1 can (14 3/4 Oz. Can) Cream Style Corn
  • 1 cup Milk
  • 1/2 cups Vegetable Oil
  • 2 whole Eggs, Beaten
  • 3 cups Shredded Cheese, divided

Directions

    In a large skillet, cook the beef, onion and peppers over medium heat until the meat is no longer pink; drain and set aside.

    In a small bowl, combine the cornbread mix, salt, baking soda, corn, milk, oil and eggs.

    Pour half of the batter in a greased 9 x 13 baking dish.

    Layer half the cheese and all of the beef mixture.

    Top with remaining cheese.

    Carefully spread remaining batter over the top.

    Bake uncovered at 350 degrees for 40-45 minutes or until a toothpick comes out clean.
