Beefy Jalapeno Cornbread

  • 1 1/2 lb. ground chuck
  • 1 1/2 c. cornmeal
  • 1 c. milk
  • 2 eggs, beaten
  • 3/4 tsp. salt
  • 1/2 tsp. soda (omit if using self-rising meal)
  • 1/2 c. bacon drippings or salad oil
  • 1 can cream-style corn (17 oz.)
  • 1 large onion, chopped
  • 4 to 5 jalapeno peppers, chopped

Directions

    Combine cornmeal, milk, eggs, salt, soda, bacon drippings and corn in a mixing bowl.

    Blend well and set aside.

    Saute ground chuck and onion until slightly browned.

    Drain.

    Chop peppers into beef mixture and mix well.
