- 2 eggs, beaten
- 2/3 c. beer
- 1 c. flour
- 1/2 tsp. salt
- 2 Tbsp. oil or melted shortening
- 1 (3 lb.) chicken, cut into serving pieces
- oil for deep frying
Directions

1Combine eggs and beer.

2Gradually stir in flour, salt and 2 tablespoons of oil until batter is smooth.

3Dip chicken into batter.

4Heat oil in deep, heavy frying pan to 375°.

5Add chicken and fry for 15 to 20 minutes, until chicken is golden and crisp. Drain on paper towels and serve.
