Beer Batter Chicken

  • 2 eggs, beaten
  • 2/3 c. beer
  • 1 c. flour
  • 1/2 tsp. salt
  • 2 Tbsp. oil or melted shortening
  • 1 (3 lb.) chicken, cut into serving pieces
  • oil for deep frying

Directions

    Combine eggs and beer.

    Gradually stir in flour, salt and 2 tablespoons of oil until batter is smooth.

    Dip chicken into batter.

    Heat oil in deep, heavy frying pan to 375°.

    Add chicken and fry for 15 to 20 minutes, until chicken is golden and crisp. Drain on paper towels and serve.
