  • 3 pounds stewing beef
  • 1 tablespoon brown sugar
  • 1 tablespoon vinegar
  • 1 1/2 beef broth or water
  • 8 slices bacon, cut in 1-inch pieces
  • 5 large onions, cut in eighths
  • 5 - 6 cloves garlic, coarsely chopped
  • 2 teaspoons dry parsley
  • leaves from 2 stalks of celery, chopped
  • 1 teaspoon thyme
  • 8 peppercorns (you can put them in a muslin bag, or dump them in the pot and take your chances!)
  • 1 bottle beer (any type at all)
