Ingredients

  • 3 c. sugar
  • 1 c. water
  • 2 c. vinegar
  • 1 tsp. salt
  • 1-2 Tbsp. pickling spice (in cheesecloth bag)
  • 3 sticks cinnamon
  • 1 lemon, sliced wafer thin (or real lemon juice, about 1 tsp.)

Directions

    Simmer beets in this mixture

    (about 1 1/2 quarts cooked, peeled and sliced beets) about 15 minutes. Remove spice bag after 10 minutes of actual simmering.

    Remove cinnamon sticks and lemon slices before packing in jars and sealing.
