Ingredients

  • 10 c. cooked and peeled beets, chopped
  • 4 large onions, chopped
  • 2 large green bell peppers, seeded and chopped
  • 1 to 2 small hot peppers, chopped (optional)
  • 1 tsp. celery seed
  • 1 Tbsp. salt
  • 1 tsp. ground allspice
  • 1 c. sugar
  • 4 c. white vinegar
  • 1/2 c. water if not enough liquid

Directions

    Combine first 4 ingredients, set aside.

    In large pan mix the remaining ingredients.

    Bring to a boil.

    Add to the first 4 ingredients.

    Bring to a boil again.

    Stir constantly.

    Have jars and lids ready.

    Boil jars and lids.

    Pint jars are best.

    Seal. Can be used as a nice compliment for holiday meals or anytime.
