- 10 c. cooked and peeled beets, chopped
- 4 large onions, chopped
- 2 large green bell peppers, seeded and chopped
- 1 to 2 small hot peppers, chopped (optional)
- 1 tsp. celery seed
- 1 Tbsp. salt
- 1 tsp. ground allspice
- 1 c. sugar
- 4 c. white vinegar
- 1/2 c. water if not enough liquid
Directions

1Combine first 4 ingredients, set aside.

2In large pan mix the remaining ingredients.

3Bring to a boil.

4Add to the first 4 ingredients.

5Bring to a boil again.

6Stir constantly.

7Have jars and lids ready.

8Boil jars and lids.

9Pint jars are best.

10Seal. Can be used as a nice compliment for holiday meals or anytime.
