- 1 can sliced beets
- 1 pkg. Good Seasons fat-free Italian dressing
- 1 red onion, thickly sliced
- lettuce
- fresh parsley
Directions

1Prepare Italian dressing according to directions.

2Drain the sliced beets; place in glass dish. Marinate beets in Italian dressing in refrigerator for 2 to 3 hours.

3Separate lettuce into leaves and place on salad plate.

4Place several beet slices on each lettuce leaf.

5Place one onion slice on top.

6Spoon dressing over onion and beets.

7Garnish with parsley and serve.
