Beet Soup

  • 5 cans beef broth
  • 4 cans water
  • 5 or 6 medium onions, chopped
  • 3 cans beets, chopped in blender
  • 1 lemon, cut in half and thinly sliced
  • 1 c. sour cream
  • salt and pepper to taste
  • 1 Tbsp. sugar

Directions

    Boil broth, water and onions, then add beets. Cook 5 minutes. Add lemon, salt, pepper and sugar. Put about 2 cups of beet mixture in blender. Add sour cream. Blend together, Then add back to beet mixture. Will have a light pink color. Serve when cold.
