- 5 cans beef broth
- 4 cans water
- 5 or 6 medium onions, chopped
- 3 cans beets, chopped in blender
- 1 lemon, cut in half and thinly sliced
- 1 c. sour cream
- salt and pepper to taste
- 1 Tbsp. sugar
Directions

1Boil broth, water and onions, then add beets. Cook 5 minutes. Add lemon, salt, pepper and sugar. Put about 2 cups of beet mixture in blender. Add sour cream. Blend together, Then add back to beet mixture. Will have a light pink color. Serve when cold.
