Ingredients
- 1 package shredded cabbage or about 1/2 of a head of cabbage shredded
- 2 large or 3 medium beets cooked and shredded
- 2 apples peeled and shredded
- 1/4-1/2 cup sliced almonds or nuts of choice
- 1/4 cup balsamic, white wine, or apple cider vinegar
- 1/4 cup of olive oil or any type of salad oil
- 1-2 tablespoons of honey
Directions

1Wash and clean beets. Then cook the beets whole in the oven about 400 degrees for about an hour or until a knife can be easily inserted and removed. Let cool.

2While the beets finish cooking, combine the vinegar, oil, and honey, and whisk together into an emulsion or simple vinagrette. Place cabbage in a bowl, shred the beets right on top, and then the apple on top of that. Then pour dressing onto salad, pour in almonds, mix all together and viola.
