- 10 medium beets
- 1 gallon water
- 2 1/2 lbs sugar
- 1 cake yeast
- 1/4 teaspoon pepper

1Pare and quarter beets.

2Boil in water till tender.

3LET STAND 24 HOURS.

4Remove beets.

5Add enough water to make one full gallon of liquid.

6Add sugar and pepper.

7Boil 10 minutes.

8Strain through cloth into clay crock.

9Spread yeast on a slice of bread which has been thoroughly dried in the oven.

10Place in lukewarm liquid.

11Let ferment 10 days.

12Bottle.

13Do not cork tightly.
