Beetroot Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 1 clove garlic crushed
  • 1 1/8 pounds beetroot cooked in natural juices
  • 1 Knorr Beef Stock Pot dissolved in 850ml boiling water
  • 1 tablespoon lemon juice
  • 1 teaspoon creamed horseradish
  • 2 slices granary bread
  • 1 3/8 ounces Flora pro.activ Buttery spread 11/2oz

Directions

    Heat the olive oil in a saucepan and over a moderate heat fry the onion and garlic till softened.

    Dice the beetroot and add to the saucepan along with the beef stock.

    Bring to the boil, then reduce heat and simmer for 10 minutes. Add the lemon juice and horseradish.

    Liquidise the soup till smooth; if a smoother texture is desired strain through a sieve.

    Blend lemon zest with the Flora pro.activ Buttery spread, toast the bread and spread with Flora pro.activ Buttery spread.

    Cut into croutons and serve with the soup.
