- 1 lb. fresh beets
- 1 tsp. salt
- 1/4 c. firmly packed brown sugar
- 1 1/2 Tbsp. cornstarch
- 2 Tbsp. wine vinegar
- 2 medium tart apples, cut into thin wedges
Directions

1Cut top from beets (leave 1-inch of stem). Cook beets in boiling salt water for 15 to 20 minutes, until just tender. Drain, reserving 2 cups of the liquid.

2Cool beets until you can slip off skins.
