Beets With Chive Cream

  • 6 whole Beets
  • 8 ounces, weight Greek Yogurt Or Lowfat Sour Cream
  • 1 bunch Chives, Chopped
  • 2 Tablespoons Olive Oil
  • 2 pinches Salt And Pepper, to taste

Directions

    Boil beets in salted water until tender (about 35 minutes). Drain, and cool in refrigerator until ready to prepare dish.

    While beets cool, mix yogurt/cream with chopped chives and set aside.

    Rub skins off beets. Cut beets in chunks or slices. Toss beets with olive oil, salt and pepper. Top with a dollop of the cream mixture.

    Serve immediately.
