  • salt
  • 1 3/4 cups brown sugar
  • 2 teaspoons lard at room temperature
  • 1 orange zest
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon powder
  • 7/8 cup milk

    Preheat oven to 180 degrees Celsius.

    Grease a cake pan with lard, and set aside.

    In a bowl, mix the flour with baking powder and cinnamon. Set aside.

    In another bowl, beat the eggs well with a pinch of salt.

    Add the sugar, and mix again, thoroughly.

    Add 1 tablespoon of lard and orange zest, and whisk again to a fluffy and uniform cream.

    Add the flour mixture, alternating with the milk.

    Stir with a spoon, but without beating. When well mixed, put the dough in the mold, and bake for 35 minutes.

    Check for doneness with a toothpick , remove the cake from the oven, and unmold when warm.

    This waiting time will allow the cake to get cheese-like on the inside, something typical of rotten cakes.
