Belgian Chicken Normandy

  • 8 boneless, skinless chicken breasts
  • 8 green or yellow apples, washed, peeled, cored and sliced
  • 1 qt. Creme Fraich (heavy whipping cream)
  • 3/4 c. Calvados or apple brandy
  • 3 oz. butter
  • 10 to 12 small white potatoes, washed and thinly sliced (do not peel)

Directions

    Melt butter in a large baking pan. Add chicken. Add apples to the pan with the chicken.

    Pour the apple brandy and cream over the chicken and apples.

    Put in a 350° oven and bake for 1 1/2 hours or until chicken is done.
