- 3 lb. cubed stewing beef
- olive oil
- 2 large green peppers, chopped
- 1 lb. mushrooms, sliced
- 2 to 3 cloves minced garlic (optional)
- 5 medium onions, sliced
- 1 1/2 lb. fresh tomatoes, seeded and chopped
- 1/2 c. chopped parsley
- A.1. sauce to taste
- cognac to taste
Directions

1Brown beef in a little oil.

2Add onions, garlic, peppers, tomatoes, mushrooms and parsley.

3Simmer until almost complete. Add A.1. sauce and the cognac and cook for 1 minute.

4Goes very well with fried potatoes.
