  • 1 1/2 cup all purpose flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 cup sugar
  • 1/3 cup oil
  • 1/2 cup citrus or plain sparkling water
  • 1/3 cup ricemilk
  • 1 tsp vanilla extract
  • 3/4 cup berries*

Directions

    Preheat oven to 375 degrees F. Combine flour, salt, baking powder, and sugar in a medium bowl.

    Add egg, oil, sparkling water, milk, and vanilla to the dry mixture.

    Fold in berries. *if using fresh or dries berries just add them as is. However, if the berries are frozen, rinse them in a strainer until the water runs clear and dry.

    Add mixture to paper cup filled or greased muffin tins.

    Bake for 20-25 minutes, turning around at the 10 minute mark or until a toothpick comes out clean.
