  • rich pie crust dough (for 8-inch double-crust pie)
  • 3 c. fresh or frozen berries
  • 1 c. plus 1 Tbsp. sugar
  • 2 1/2 Tbsp. quick-cooking tapioca
  • 1 Tbsp. lemon juice
  • 1 Tbsp. butter

Directions

    Preheat oven to 375°.

    Fit bottom crust into 8-inch Pyrex pie plate.

    Cover with berries.

    Mix sugar, tapioca and all of the berries.

    Drizzle lemon juice over mixture and dot with butter. Top with crust; seal and flute edges.

    Sprinkle top crust with remaining tablespoon of sugar.

    Cut steam vents.
