Ingredients

  • 1 tsp. gelatin
  • 1/4 cup warm water
  • 1/2 cup berries
  • 2 tbsp. sugar
  • 1 tbsp. lemon juice
  • 1/2 tsp. rum essence
  • 1/2 cup whipped cream

Directions

    Soak gelatin in water.

    Place in microwave oven for 1 minute to dissolve.

    Combine berries, sugar, lemon juice and rum essence.

    Add gelatine, refrigerate untill beginning to set.

    Fold in whipped cream, pour into individual dishes.

    Refrigerate to serve.

    Decorate with berries and whipped cream if desired.
