- 3 lbs onions, sliced 1/8 inch thick
- 8 tablespoons butter
- 3 tablespoons red wine vinegar
- salt & freshly ground black pepper
Directions

1Melt the butter in a large skillet, add the onions.

2Cover and cook over low heat 30 minutes.

3Remove cover, raise the heat, stirring to keep the onions from sticking.

4As soon as the onions begin to brown- in about 10 minutes- lower the heat.

5Cover and cook for 10 minutes.

6Repeat step 2.

7Repeat step 3.

8Add the vinegar, salt and pepper.

9Turn the heat to high and stir with a wooden spoon until the vinegar is evaporated~ about 5 minutes.

10This dish can be made in advance.

11To reheat: cook over low heat for 10 minutes.

12Large, mild-flavored onions work best.

13Caramelized onions can be frozen in an airtight container up to three months.
