- 4 slices Smoky Bacon
- 1 whole Heirloom Tomato
- 3 leaves Butter Lettuce
- 2 slices Really Nice White Bread
- 1 clove Garlic
- 1 Tablespoon Mayonnaise
- 1 pinch Sea Salt
- 1 pinch Fresh Ground Black Pepper
Directions

1First off, cook your bacon in a skillet over medium heat until its really crispy.

2It is important that you retain the bacon fat!

3I like to grill mine and catch the bacon in a baking tray under the grill (I think Americans call this kind of grill a broiler).

4While the bacon is cooking, slice the tomato, and spread the slices on a paper towel to absorb some of the water.

5Sprinkle the tomato slices with a pinch of sea salt and some freshly ground black pepper.

6Wash your lettuce.

7Thats all you have to do with that.

8Next, take your really nice white bread I like crusty sourdough.

9This is the bit where it gets awesome.

10Take the bacon fat from the cooked bacon, and lightly dip the bread in it on one side of each slice.

11Next, take the garlic clove and slice in half.

12Rub the other side of the bread with the garlic clove.

13Toast the bread until crisp, but keep an eye on it in case it burns.

14I just use a regular toaster, but you MIGHT be safer using your grill.

15This way it gets a gorgeous smoky bacon flavor.

16When the bread is toasted, slather on the mayonnaise, top with the crispy bacon.

17Add the tomato slices, salt and pepper to taste, and the lettuce.

18Then sandwich the two slices of bread together.

19Cut the sandwich in half, and enjoy.
