- 5 c. chopped, cooked chicken
- 3 c. cooked regular rice
- 2 Tbsp. salad oil
- 2 Tbsp. orange juice
- 2 Tbsp. vinegar
- 1 tsp. salt
- 1 1/2 c. halved seedless grapes
- 1 1/2 c. sliced celery
- 1 (15 1/2 oz.) can chunk pineapple, drained
- 1 (11 oz.) can mandarin oranges
- 1 c. toasted, slivered almonds
- 1/2 c. mayonnaise
Directions

1Combine first 6 ingredients in a large bowl; let stand for 30 minutes to allow flavors to blend.

2Add remaining ingredients and toss gently.

3Refrigerate for a couple of hours before serving. Serve on lettuce leaves.
