- 1 pkg. yellow cake mix
- 4 eggs, unbeaten
- 2 c. dates (1 lb.)
- 1 jar whole red candied cherries
- 1/2 c. applesauce
- 1 tsp. salt
- 1/2 c. flour
- 1/2 c. green candied pineapple
- 4 c. English walnuts, chopped
Directions

1Empty cake mix into bowl.

2Add applesauce, eggs and salt. Beat 3 minutes until creamy.

3Combine fruit and nuts with flour and mix well.

4Stir into the batter.

5Bake in slow oven at 275° about 2 hours.

6Cool thoroughly.

7Wrap tightly in moisture proof wrap.

8Store in refrigerator or freezer.

9Makes three 3 1/2 x 7 1/2-inch cakes or five 3 x 5 1/2-inch cakes.

10When using small pans, bake 1 hour and 25 minutes at 275°.
