  • 1 pkg. yellow cake mix
  • 4 eggs, unbeaten
  • 2 c. dates (1 lb.)
  • 1 jar whole red candied cherries
  • 1/2 c. applesauce
  • 1 tsp. salt
  • 1/2 c. flour
  • 1/2 c. green candied pineapple
  • 4 c. English walnuts, chopped

    Empty cake mix into bowl.

    Add applesauce, eggs and salt. Beat 3 minutes until creamy.

    Combine fruit and nuts with flour and mix well.

    Stir into the batter.

    Bake in slow oven at 275° about 2 hours.

    Cool thoroughly.

    Wrap tightly in moisture proof wrap.

    Store in refrigerator or freezer.

    Makes three 3 1/2 x 7 1/2-inch cakes or five 3 x 5 1/2-inch cakes.
