Ingredients

  • 6 medium potatoes, peeled and cooked (do not slice potatoes)
  • 3 eggs, boiled, peeled and chopped
  • 1/2 c. onion, chopped
  • 1/2 c. dill pickles, chopped
  • 1/4 c. pimentos, chopped
  • 2 Tbsp. parsley
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 2 Tbsp. mustard, prepared
  • 1/2 to 3/4 c. mayonnaise
  • 1/2 c. celery, minced (if you like flavor)

Directions

    Peel potatoes and cover with water in a saucepan; cook until tender when pricked with a fork.

    Place potatoes, whole, in a bowl and refrigerate until cool.

    Dice potatoes into 1-inch cubes; add other ingredients and mix well.

    Serve chilled or at room temperature.
