Ingredients
- 6 medium potatoes, peeled and cooked (do not slice potatoes)
- 3 eggs, boiled, peeled and chopped
- 1/2 c. onion, chopped
- 1/2 c. dill pickles, chopped
- 1/4 c. pimentos, chopped
- 2 Tbsp. parsley
- 1 tsp. salt
- 1/2 tsp. black pepper
- 2 Tbsp. mustard, prepared
- 1/2 to 3/4 c. mayonnaise
- 1/2 c. celery, minced (if you like flavor)
Directions

1Peel potatoes and cover with water in a saucepan; cook until tender when pricked with a fork.

2Place potatoes, whole, in a bowl and refrigerate until cool.

3Dice potatoes into 1-inch cubes; add other ingredients and mix well.

4Serve chilled or at room temperature.
