Ingredients
- 3 lb. zucchini squash
- 1/4 lb. Velveeta cheese
- 1 small bunch scallions (green onions)
Directions

1Wash zucchini and cut in 1-inch slices.

2Put in a large pot and cover with water.

3Bring to a boil and let boil for 5 minutes only.

4Drain squash very well.

5Cut scallions into very small pieces (use the green and white part).

6Put the squash into a long baking dish, sprinkle scallions on top of squash.

7Salt and pepper to taste.

8Slice cheese and place on top.

9Bake in 350° oven until cheese is melted, about 15 to 25 minutes.
