- 2 1/2 lb Mochi rice (5 1/2 c.)
- 5 1/2 c. Water
- 1 can (13 ounce) coconut lowfat milk
- 1 lb Dark brown sugar Banana leaves
Directions

1In a rice cooker or possibly large saucepan, rinse rice; drain.

2Add in water and cook rice.

3In a saucepan, combine coconut lowfat milk and 1 1/4 c. of the brown sugar.

4Cook over medium heat for about 20 min, stirring constantly, till the mix thickens.

5Wilt banana leaves over low heat on electric surface unit or possibly in microwave oven; line a 13 x 9 x 2-inch baking pan.

6Preheat electric oven to 350 F. Stir remaining brown sugar into the warm rice; mix well.

7Reserving 1/2 c. coconut lowfat milk mix, stir remainder into rice.

8Put into prepared pan.

9Pour the reserved 1/2 c. coconut lowfat milk mix over rice.

10Bake for 20 min then broil for 5 min to brown top.

11Cold and cut into serving pcs.
