Ingredients
- 2 lb. dried navy beans
- 2 qt. cold water
- 1 large onion, chopped
- 1 Tbsp. salt
- 4 tsp. vinegar
- 1 tsp. mustard
- 2 Tbsp. brown sugar
- 3/4 c. molasses
- 1/2 c. catsup
- 1 lb. Cowboy bacon or salt pork
- pepper to taste
Directions

1Wash and sort beans; simmer, covered, in water for 30 minutes. Drain; reserve stock.

2Combine remaining ingredients and Cowboy bacon or salt pork cut into 1/2-inch pieces.

3Place in 2 1/2-quart casserole; add beans.

4Cover with stock.

5Bake, covered, at 250° for 7 to 8 hours.

6Stir occasionally; add liquid as needed.

7Yields 10 to 12 servings.
