Ingredients

  • 2 lb. dried navy beans
  • 2 qt. cold water
  • 1 large onion, chopped
  • 1 Tbsp. salt
  • 4 tsp. vinegar
  • 1 tsp. mustard
  • 2 Tbsp. brown sugar
  • 3/4 c. molasses
  • 1/2 c. catsup
  • 1 lb. Cowboy bacon or salt pork
  • pepper to taste

    Wash and sort beans; simmer, covered, in water for 30 minutes. Drain; reserve stock.

    Combine remaining ingredients and Cowboy bacon or salt pork cut into 1/2-inch pieces.

    Place in 2 1/2-quart casserole; add beans.

    Cover with stock.

    Bake, covered, at 250° for 7 to 8 hours.

    Stir occasionally; add liquid as needed.
