Ingredients
- 3 slices bacon, cut in pieces
- 4 Tbsp. flour
- pepper to taste
- 2 lb. lean beef, cut up
- 1 large onion, chopped
- 4 cloves garlic
- 2 (28 oz.) cans tomato sauce
- 2 c. beef broth
- 1 c. red wine
- 1/4 tsp. thyme
- 6 carrots, cut up
- 3 stalks celery, cut up
- 6 large potatoes, cut up
- 1/4 tsp. red pepper
Directions

1Cook bacon until brown.

2Combine meat, flour and pepper in bowl; mix well.

3Brown meat in bacon fat; stir often.

4Add oil if needed.

5Add onion and garlic.

6Add tomato sauce, broth, wine and thyme.

7Cover and cook slowly, 1 1/2 to 2 hours.

8Add carrots, celery and potatoes; cook until vegetables are done.

9Serves 3 to 4.
