Ingredients
- 2 c. flour (I use unbleached)
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 2 tsp. baking powder
- 2 tsp. sugar
- 3/4 c. skim milk
- 4 to 5 Tbsp. vinegar (white or cider)
- 1/2 c. butter or margarine
Directions

1Preheat oven to 450°.

2Stir vinegar into milk and set aside. Stir all dry ingredients into flour.

3Cut in shortening with fork or pastry cutter until quite fine or looks like cornmeal.

4Make a hole in center and pour milk into flour.

5Fold flour into it gently.

6If too dry,

7add small amount of milk; gently stir and fold until all flour is moistened.

8Scrape from sides of bowl and form into a rounded mass that can turn out onto a thickly floured board.

9Very gently, turn and coat with flour; gently push and knead 6 to 8 times.

10Gently pat into 1-inch thickness.

11Cut with biscuit cutter.

12Place 1/2-inch apart on cookie sheet.

13Re-roll scraps and pat out again to finish cutting.

14Bake 10 minutes on rack in middle of oven or 1 notch above.
