Bison Meatloaf

Ingredients

  • 1- 1/2 pound Ground Bison, Or Ground Beef
  • 13 cups Finely Chopped Onion
  • 3/4 cups Uncooked Oats
  • Salt To Taste
  • Pepper To Taste
  • 3/4 cups Tomato Juice Or V8
  • 1 whole Egg
  • 1 cup Brown Sugar (light Or Dark)
  • 1 Tablespoon Yellow Mustard
  • 1/4 cups Ketchup

Directions

    Preheat oven to 350 degrees F.

    In a bowl, mix by hand the meat, onions, oats, salt, pepper, juice and egg just till well blended.

    Transfer to a baking dish (I use a 9x13 stoneware pan) and free form into a loaf.

    In a separate bowl, mix together brown sugar, mustard and ketchup to form a thick paste.

    Spread mixture on the top and sides of meatloaf.

    Bake for 1 hour 15 minutes.

    Let rest for 10 minutes before cutting into it.

    Great served with mashed or parsley potatoes and green beans with onions.
