Bison Meatloaf

Ingredients
- 1- 1/2 pound Ground Bison, Or Ground Beef
- 13 cups Finely Chopped Onion
- 3/4 cups Uncooked Oats
- Salt To Taste
- Pepper To Taste
- 3/4 cups Tomato Juice Or V8
- 1 whole Egg
- 1 cup Brown Sugar (light Or Dark)
- 1 Tablespoon Yellow Mustard
- 1/4 cups Ketchup
Directions

1Preheat oven to 350 degrees F.

2In a bowl, mix by hand the meat, onions, oats, salt, pepper, juice and egg just till well blended.

3Transfer to a baking dish (I use a 9x13 stoneware pan) and free form into a loaf.

4In a separate bowl, mix together brown sugar, mustard and ketchup to form a thick paste.

5Spread mixture on the top and sides of meatloaf.

6Bake for 1 hour 15 minutes.

7Let rest for 10 minutes before cutting into it.

8Great served with mashed or parsley potatoes and green beans with onions.
