Ingredients

  • 3 Large eggs
  • 1 pound cottage cheese
  • 3 tbsp. lowfat sour cream
  • 1 c. shredded cheddar cheese
  • 1/2 c. Bisquick
  • 1/4 teaspoon salt
  • 1/4 c. melted butter
  • 1 can minced green chilies (I use half this amount)
  • Approximately 1 c. cooked sausage

    Combine all ingredients well.

    Fill well-greased mini-muffin tins 2/3 full.

    Bake in a preheated 375 degree oven for 20 min.

    Serve at room temperature.

    These freeze well.

    Yield: 48-54 quiches.

    I like to use half cheddar cheese and half Mozzarella cheese.
