- 1 green bell pepper- diced
- 1 1/2 cups veggie broth
- 3 chopped garlic cloves
- 2 cans black beans- drained
- 18 oz can tomato sauce
- 1 can diced tomatoes- don't drain
- 2 tablespoons ground cumin
- 2 tablespoons red chili pepper
- 2 tablespoons dried oregano
- 1 cup corn kernels (fresh or frozen)
- 1/4 cup fresh chopped cilantro
- salt and pepper
Directions

1Heat broth, saute pepper in broth for 5 minutes- add spices

2Add the rest of the ingredients except the cilantro and corn- simmer for 20 minutes uncovered

3Add corn and cilantro- cook covered for 5 minutes
