Ingredients

  • 1 green bell pepper- diced
  • 1 1/2 cups veggie broth
  • 3 chopped garlic cloves
  • 2 cans black beans- drained
  • 18 oz can tomato sauce
  • 1 can diced tomatoes- don't drain
  • 2 tablespoons ground cumin
  • 2 tablespoons red chili pepper
  • 2 tablespoons dried oregano
  • 1 cup corn kernels (fresh or frozen)
  • 1/4 cup fresh chopped cilantro
  • salt and pepper

Directions

    Heat broth, saute pepper in broth for 5 minutes- add spices

    Add the rest of the ingredients except the cilantro and corn- simmer for 20 minutes uncovered

    Add corn and cilantro- cook covered for 5 minutes
