Black Bean Dip

  • 2 (15 1/2 oz.) cans black beans, drained
  • 16 oz. container sour cream
  • 2 c. shredded cheese (Cheddar or mixture of your favorites)
  • 1 green onion

Directions

    Drain black beans. Pour into 9 x 12-inch pan. Chop onion finely with stems and mix into black beans. Spread sour cream over top of bean mixture; you may use as much or as little sour cream as you like. Bake at 350° for 30 to 40 minutes. Cover with shredded cheese and heat until melted. Serve hot with tortilla chips.
