Black Bean Dip

  • 1 c. dried black beans, soaked overnight, drained and cooked in 4 c. water about 1 1/2 hours or until tender, drained or 1 (16 oz.) can black beans, drained and rinsed
  • 2 Tbsp. chopped red onion
  • 2 Tbsp. balsamic vinegar
  • 1 Tbsp. fresh orange juice
  • 1 medium clove garlic, crushed
  • salt and pepper to taste

Directions

    In blender or food processor, combine beans, 1 tablespoon chopped onion, vinegar, orange juice and garlic.

    Blend until smooth.

    Season with salt and pepper.

    Sprinkle remaining onion on top.

    Serve with assorted fresh raw vegetables or pita bread, cut into triangles and toasted in a 325° oven until crispy.
