- 1 small red onion, peeled and quartered
- 1 c. loosely packed cilantro leaves
- 2 cans (15 oz. each) black beans, rinsed and drained
- 4 tsp. vegetable oil
- 1 tsp. coarse (kosher) salt
- 1/2 tsp. chili powder
- 1/8 tsp. ground hot red pepper
- 1/2 c. plus 2 Tbsp. orange juice
Directions

1Combine onion and cilantro in food processor. Whirl until finely chopped.

2Add beans, oil, salt, chili powder and ground hot red pepper.

3Process using on/off pulses until evenly chopped (do not puree).

4Scrape into bowl.

5Stir in orange juice. Serve immediately or refrigerate, covered, for up to 6 hours.
