Black Bean Dip

  • 1 small red onion, peeled and quartered
  • 1 c. loosely packed cilantro leaves
  • 2 cans (15 oz. each) black beans, rinsed and drained
  • 4 tsp. vegetable oil
  • 1 tsp. coarse (kosher) salt
  • 1/2 tsp. chili powder
  • 1/8 tsp. ground hot red pepper
  • 1/2 c. plus 2 Tbsp. orange juice

Directions

    Combine onion and cilantro in food processor. Whirl until finely chopped.

    Add beans, oil, salt, chili powder and ground hot red pepper.

    Process using on/off pulses until evenly chopped (do not puree).

    Scrape into bowl.

    Stir in orange juice. Serve immediately or refrigerate, covered, for up to 6 hours.
