Ingredients
- 2 (16 ounce) cans black beans
- 2 cups salsa
- 1 teaspoon butter
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 2 garlic cloves
- 1 tablespoon dried parsley or 1 tablespoon cilantro
- 1 teaspoon ground cumin
- 14 teaspoon salt
- 14 cup shredded cheese
- 1 medium tomatoes, chopped
Directions

1Blend 1 can of beans, and 1/2 cup of salsa in a food processor until smooth.

2I use the Wonderful Salsa off this site.

3Saute the onion, pepper, and garlic in the butter until tender.

4Add all the rest of the ingredients to the pan, (except the cheese,and tomatoe) and simmer for 5 to 10 min., stirring often.

5Pour into serving dish and garnish the top with the cheese and tomatoe.

6Serve immediately with chips, and veggie sticks.
