  • 1 15 oz can black beans, drained and rinsed
  • 1 Sm Green pepper cut into bite sized strips
  • 1 Small carrot coarsely shredded.
  • 2 tablespoon chopped red onion
  • 2 tablespoons Vegetable oil )prefer olive oil
  • 1/4 teaspoon finely shredded lime peel
  • 2 tablespoons lime juice
  • 1/8 teaspoon ground cumin
  • 1/8 teaspoon red pepper (optional)
  • lettuce leaves (optional)
