  • 2 cans black beans, rinsed
  • 20 ounce frozen corn
  • 1/2 bunch cilantro, chopped
  • 3 limes juiced
  • 3 large, chopped tomatoes
  • 1 green pepper, chopped
  • 1 red or orange pepper (optional)
  • 1 bunch green onions, chopped
  • Avocados, sliced into small pieces (optional)
  • 1 cup olive oil

Directions

    Combine all ingredients into a bowl except for the lime juice and olive oil. Combine lime juice 1 cup olive oil, salt and pepper (to taste). Drizzle over salad. For an alternate dressing, try feta cheese with olive oil.
