Ingredients

  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can white kidney beans, rinsed and drained
  • 12 cup cucumber, chopped
  • 12 cup sweet pepper, chopped
  • 14 cup onion, chopped
  • 14 cup fresh cilantro, minced
  • 13 cup red wine vinegar
  • 14 cup olive oil
  • 12 teaspoon salt (optional)
  • 14 teaspoon garlic powder
  • 18 teaspoon pepper
  • 6 lettuce leaves (optional)

Directions

    In a large, bowl combine the beans, cucumber, red pepper, onion and cilantro.

    In a small boiwl, whisk the vingar, oil and seasonings.

    Pour over bean mixture and toss to coat.

    Cover and refrigerate until serving.

    Using a slotted spoon, serve over lettuce if desired.
