Ingredients

  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 (14 oz.) can stewed tomatoes
  • 2 c. loose-packed frozen vegetables
  • 3/4 c. instant brown rice
  • 1 c. water
  • 1/2 tsp. dried thyme or dill weed, crushed
  • several dashes Tabasco sauce
  • 1/2 c. toasted slivered almonds
  • 1/2 c. shredded low-fat cheese (Mozzarella or Cheddar)
  • 1 (10 oz.) can reduced sodium tomato soup (condensed)

Directions

    Stir together first 7 ingredients in large skillet.

    Bring to boil.

    Reduce heat, cover and simmer 12 to 14 minutes.

    Stir in can of tomato soup.

    Heat through.

    Stir in almonds.

    Top with shredded cheese.

    Serve with bread and salad.
