- 1 (15 oz.) can black beans, drained and rinsed
- 1 (14 oz.) can stewed tomatoes
- 2 c. loose-packed frozen vegetables
- 3/4 c. instant brown rice
- 1 c. water
- 1/2 tsp. dried thyme or dill weed, crushed
- several dashes Tabasco sauce
- 1/2 c. toasted slivered almonds
- 1/2 c. shredded low-fat cheese (Mozzarella or Cheddar)
- 1 (10 oz.) can reduced sodium tomato soup (condensed)
Directions

1Stir together first 7 ingredients in large skillet.

2Bring to boil.

3Reduce heat, cover and simmer 12 to 14 minutes.

4Stir in can of tomato soup.

5Heat through.

6Stir in almonds.

7Top with shredded cheese.

8Serve with bread and salad.
