Black Bean Soup

- 1 c. sliced leeks
- 1/3 c. oil
- 2 cloves garlic, peeled and crushed
- 2 (1 lb.) cans black beans
- 1/2 c. water
- 1 tsp. salt
- 1/8 tsp. fresh ground pepper
Directions

1Saute the leeks in the oil in a large saucepan until golden. Add garlic and 1 can of beans with their liquid.

2Mash up the beans with a fork.

3Add the second can of beans with their liquid, but do not mash the beans.

4Stir in the water, salt and pepper and simmer, covered, for 40 minutes, stirring occasionally.

5Serve hot.
