Black Bean Soup

  • 1 onion, chopped (medium to large)
  • 2 tablespoons minced garlic
  • 2 (15 ounce) cans black beans
  • 4 cups broth
  • 3 teaspoons cumin
  • 1 teaspoon cayenne pepper
  • thyme (to taste)
  • oregano (to taste)
  • 2 cups chopped fresh tomatoes
  • 4 ounces shredded cheddar cheese (or other cheese of choice)

Directions

    Puree one can of black beans, set aside.

    Saute onion and garlic, over medium-high heat.

    Add spices.

    Stir for one minute.

    Add pureed beans, other can of beans.

    Add broth.

    Simmer for 30 minutes.

    Top with chopped tomato and cheese.
