Black Bean Soup

Ingredients
- 1 lb. dried black beans
- 1 lb. spicy stuffed sausage
- 3 large onions, chopped
- 3 cloves garlic, chopped
- 3 green peppers, chopped
- 1 or 2 hot peppers, chopped
- 1/2 c. olive oil
- 3 bay leaves
- pinch of basil
- 1 Tbsp. wine vinegar
- 1 dash salt
- black pepper to taste
- cooked rice
Directions

1Wash and sort beans thoroughly.

2Place in large pot and cover with cold water.

3Add sausage after cutting into 1-inch slices. Bring to boil.

4Reduce heat to simmer.

5Saute vegetables in olive oil.

6Add to beans; add bay leaf and basil.

7Cook until beans are tender.

8Remove 1 1/2 cups drained beans and place in blender with vinegar.

9Blend until it forms a paste.

10Add paste to soup with salt and pepper.

11Serve over rice.
