  • 4 qt. water
  • 1 lb. dried black beans, rinsed and drained
  • 1 envelope Lipton onion soup mix
  • 1 small ham hock or bone
  • 2 stalks celery, chopped
  • 2 cloves garlic, chopped
  • 1 tsp. lemon juice
  • 1 whole clove
  • 1 bay leaf
  • few sprigs parsley
  • 3 Tbsp. cooking sherry
  • 1 tsp. pepper

    In a large saucepan or stock pot, bring 2 quarts of water to a boil; add beans and boil for 2 minutes.

    Remove from heat, then let stand, covered, for 1 hour.

    Drain.
