  • 2 c. black beans, soaked overnight
  • 1 to 2 Tbsp. oil
  • 1 bay leaf
  • 1 whole clove
  • 1 Tbsp. molasses
  • 1 Tbsp. vinegar
  • 2 peppercorns
  • 1 large onion, chopped
  • 1 celery rib, chopped
  • 1 carrot, chopped
  • pinch of cayenne pepper
  • 1 Tbsp. tamari or soy sauce
  • pinch of mace

Directions

    Rinse and drain the beans.

    Put in a large pot with 1 1/2-quarts water and oil, bay leaf, clove, molasses, vingar and peppercorns.

    Bring to a boil, then simmer 1 1/2 to 2 hours.
