- 1 lb. black beans, soaked overnight
- 2 medium onions
- 2 c. celery, diced
- 1 c. bell pepper, diced
- 4 qt. beef or chicken stock
- 3 ham hocks
- 1 c. rice
- 3 oz. vinegar
- salt
Directions

1Saute vegetables in bacon fat for 5 minutes.

2Add bean stock and ham hocks.

3Cook until beans are almost done.

4Add rice and cook until rice is tender.

5Add seasonings and vinegar.

6Serve with chopped onion.
