  • 1 lb. black beans, soaked overnight
  • 2 medium onions
  • 2 c. celery, diced
  • 1 c. bell pepper, diced
  • 4 qt. beef or chicken stock
  • 3 ham hocks
  • 1 c. rice
  • 3 oz. vinegar
  • salt

Directions

    Saute vegetables in bacon fat for 5 minutes.

    Add bean stock and ham hocks.

    Cook until beans are almost done.

    Add rice and cook until rice is tender.

    Add seasonings and vinegar.

    Serve with chopped onion.
